A very Japanese New Year.

This is a tradition that has been practiced since the 700’s. With rice being the staple of Japanese cuisine, it would be only fitting to bring your good luck with the bounty of rice.

The cooked rice is pounded in a Mortar and Pestle until a sticky paste forms. The the rice is shaped into individual servings, dressed either sweet or savory and enjoyed with champagne (it is New Year after all).
